The best thing about October is pumpkins! Love. Them. I see pumpkins in the store and I instantly want to visit a pumpkin patch, decorate my house, bake pumpkin muffins, toast the seeds and (you know it) make Happy Pumpkin Juice!

I have a long list of favorite juices but pumpkin juice is at the top. I add a tiny bit of lemon and ginger to spruce up the flavour, and apples for sweetness. This recipe is technically for two servings but you have to have a very generous spirit to share this juice and not simply inhale it like I normally do.

The bright orange pumpkin hue is your first hint that pumpkins are outstanding for your health. Generally speaking, vividly coloured vegetables and fruits are highest in nutrition. For example, pumpkins happen to be one of the best sources for bioavailable carotenoids, which lower the risk of many cancers, heart disease, cataracts and macular degeneration.

To make you feel even more fabulous, save the seeds for toasting because pumpkin seeds contain L-tryptophan which boosts melatonin and serotonin production in your brain, to help you sleep better and feel happy.

RECIPE FOR TWO SERVINGS (ASSUMING YOU CAN BRING YOURSELF TO SHARE THIS GEM):

  • 1 pie pumpkin – peel and seeds removed
  • 2 small apples – cored but not peeled
  • ΒΌ lemon – peeled
  • 2cm slice of ginger (optional)
  • 1 tsp of flaxseed oil (optional)

Juice only the flesh of the pumpkin. You have to scoop out the seeds and slice away the shell. Chop the apples, lemon and ginger to the right size for your juicer and juice it all up! Stir the flaxseed oil directly into the juice to help your body absorb the A vitamins.
