Simple Yellow

I find that what goes on in my kitchen is often a metaphor for my life. At this moment in my life and in my kitchen, I am craving simplicity. It is so easy to get swept up in the current of activities and get carried away, allowing things to become complicated and unnecessarily tiring. At present, I am embracing the lesson of balance and simplicity, enjoying an easier flow of life and food.

When creating healthy recipes, I always begin with an idea of the result I want and then play around until I get there. For this juice, my vision was simple: a single colour and a smooth flavour. Today, I’m not looking for pizzazz or brilliance. I would rather keep it simple.

I began by taking all the yellow items out of my fridge: spaghetti squash, lemon, apples, grapefruit, ginger, yellow pepper and yellow zucchini. I quickly removed the grapefruit and the yellow pepper from the realm of possibilities. From a flavour perspective, they bring an intensity I’m not interested in today. After a quick trial and error to determine quantities and flavours, I was happy that all of the other items easily blended into a Simple Yellow juice. The flavour is a smooth, tranquil sweetness with hints of layers to be explored another day.

Without trying too hard, this mild yellow nectar is a gentle healer. Spaghetti squash and zucchini contain many healing and health boosting properties, even omega-3 essential fatty acids. Lemons are detoxifying, an excellent ally for your liver. I often find ways to add apples, lemons and ginger to recipes because they are my personal favorites, for their flavours and incredible health benefits.

I hope that when you enjoy Simple Yellow you can feel the spirit of simplicity and restfulness in which it was created.

RECIPE FOR ONE SERVING:

  • Half of a small spaghetti squash (2 cups cubed) – peeled and seeded
  • 2 small apples – cored, not peeled
  • Half of a yellow zucchini, not peeled
  • ¼ lemon – peeled
  • Small slice of ginger, about 2cm in length

Remove the seeds from the squash, then peel and slice it into cubes. Core the apples and peel the lemon. Slice everything according to your juicer’s capabilities. Juice it all together, the order doesn’t matter.

PS – You can toast the seeds from the spaghetti squash for a crunchy, healthy snack!
