Wild Spring has an intriguing taste. The opposite of some of my sweeter creations, this green juice is earthy, spirited and fresh. This is the juice I drink when I want to feel absolutely alive! I don’t always want an easy breezy bowl of sweetness or a serene stroll around the park. Wild Spring is the juicing equivalent of a fabulous blast of crisp wind in your face. It is intensely refreshing and a little shocking. You may need to brace yourself but this is the green juice that will leave you feeling alive all the way down to your toes.
Besides its wildly bitter taste, there are real reasons why this juice delivers a jolt. It is absolutely overflowing with healing and nourishment. The baby greens are high in vitamins A and K, calcium, iron and potassium. Celery strengthens your immune system and balances your body fluids, reducing swelling and inflammation. The cauliflower adds vitamins C and K as well as excellent detoxifying and anti-cancer properties. I wrap these gems up in a grapefruit, the hero of the fruit world and the physical bulk of this juice. Grapefruit is not only deeply nourishing but incredibly alkalizing and detoxifying. It contains the flavonoid naringin which has antiviral, antifungal, antibacterial, anti-cancer and anti-inflammatory abilities. And to top off this bountiful healing, I add a knob of ginger, which contains a wallop of vitamin E and increases blood circulation, and of course, one whole detoxifying lemon.

RECIPE FOR ONE SERVING:
Prepare the produce for juicing, washing well and slicing off the peel from the grapefruit and lemon. Slice everything according to your juicer’s capabilities. I recommend juicing the lettuce first to maximize nutritional potency of the delicate greens. Juice everything else after the lettuce and drink right away. Happy Wild Spring!
